My decision to go gluten-free was a few years in the making. I had been thinking about doing it for a while. I was having major stomach issues and just felt sluggish a lot of the time. I have had the celiac screening test 5 different times and I have passed it every time, but I always believed going gluten-free would help me. I was a bit hesitant because I knew that by making this lifestyle change I would have to make my own meals instead of eating whatever my mom prepared :) Then I started taking to some of my friends with celiac disease and they showed me that being gluten free is not that big of a deal and how many options there are out there. I took the plunge in October 2013 and never looked back since. I  now can eat an entire sandwich without having to stop due to a stomach ache. I have more energy and I feel like my BG is not as sporadic.

My Favorite Gluten Free products
Quick Recipes 
Flourless Peanut Butter Cookies 
Ingredients: 1 cup peanut butter, 1 cup sugar, 1 tsp vanilla extract, 1 large egg lightly beaten
Directions: Preheat oven to 350 degrees F. Mix all ingredients. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Bake for 10 minutes or until golden brown. Cool and enjoy! 

Slightly burnt Banana Pancake
Giant Banana Pancake 
Ingredients: 1 banana, 1 egg, 3 egg whites
Directions: Combine all ingredients in a blender on the smoothie setting until it is the consistency of pancake batter. Then cook  as you would with a normal pancake.
